What is millet couscous and difference with "regular" couscous

Millet is a gluten free cereal, so common in West Africa and known for its health benefits like having a low glycemic index, while being rich in dietary fiber. It is sold as grains, couscous or flour.
It is commonly called "Mil" in the Western African French and the couscous is called "Couscous de petit mil", which translates into couscous of small millet. It can be prepared as a meat accompaniment or dessert. |
INGREDIENTS OF THE MILLET COUSCOUS
- 1/2 cup of millet couscous
- Approximately 1L of water
- Salt, pepper and other spices or condiments to taste

How to prepare the millet couscous
Heat one cup of water, wait until warm then pour in 1/2 cup of millet couscous and leave it for 5 minutes.
Transpose the millet to a strainer, and steam it for 20 minutes.
You may use a cooking pot as shown or a couscous maker.

Remove from steam and add salt, ground black pepper, ground chillies and paprika, or any other spice of your choice. Serve with your favorite fish or chicken, or simply as a side dish for your sardines.
You may also simply substitue wheat couscous with millet couscous, while keeping the same traditional couscous recipe.
