Cut the stems in square pieces.
Boil water and plunge the stems for a minute or two and strain them.
Crush the garlic, add the olive oil and lemon juice and mix all with the Tehina (Tahina).
The Tehina will thicken when mixed to the lemon juice which will create the so called "Tarator" sauce in the Lebanese cuisine. Add a bit of water in case your sauce gets too thick.
