Oregano is simply found around the Mediterranean. If you're on a hike in the Lebanese mountains, you will for sure encounter any of the so close Origanum Vulgare and Origanum Syriacum species.

Pick up the best specimens with healthy green leaves by cutting the Oregano stems around 1 cm above ground. You can then take out the leaves while still green as shown below:
And put them in a tray in a sunny place until they dry.

Or, you can hang them in bunches until the Oregano leaves are dry before taking them out of their stems (easier):
Once dry, crumble your Oregano leaves with your fingers and store them in a glass jar. Use them as a condiment for your meat and sauces!
