Put the corn oil in a large frying pan in a manner to cover the whole bottom with a thin film of oil.

Do not let the egg white thicken at the bottom of the pan, stir it and mix it with the yolk and keep stirring in a gentle and slow movement. Keep stirring all the time by insisting on the perimeter of the pan in particular.
You may stop as soon as no transparent egg white is left and the appearance is still creamy and juicy like below.
Remove from heat, add the olive oil and serve immediately.
