Preparing the stuffing of the Lebanese "Kousa Mahchi"
Cut 2 tomatoes in small dices and add the rice, tomatoes and meat in a bowl that is large enough to be able to mix the ingredients.
Mix all with your hand while adding the tomato paste and a pinch of ground ginger, 1/4 tea spoon of ground black pepper and 1/2 tea spoon of ground Lebanese 7-spice mix.
In case yo do not have Lebanese 7-spice mix, just double the black pepper and add as much ground cinnamon.

Stuffing and cooking the zucchinis and eggplants
Stuff the zucchinis and eggplants as shown making sure to:
- Reach the bottom of the vegetable; use the handle of a wooden spoon to push the stuffing if your finger doesn't go in.
- Press well the stuffing not to leave empty spaces as this will ensure the stuffing will remain firmly inside the vegetable.
- Leave 1/2 cm to 1 cm on top empty to take into account the volume increase of the stuffing when the rice gets cooked.
Put the stuffed eggplants and zucchinis in large cooking pot.
Remaining tomatoes are cut as shown in the left picture; Leave the "cover" you just created attached to the tomato.
Empty the tomato contents in the cooking pot (middle).
Stuff the capsicum and add it to the other vegetables.
Spread any excess stuffing all over the vegetables.
