WHAT YOU NEED
* standard jams use 1Kg of sugar for 1Kg of fruits. This is a reduced sugar recipe for a better taste. It cannot be however preserved as long as sweeter jams, reason why it is advised to consume it within 1 to 3 months from its making. Therefore, it is not recommended to do a big quantity at a time.

Cut quince fruits in quarters and remove dark spots & seeds. Place quince in a blender with a julienne blade.
Transfer fruit cuts into a cooking pot then add cane sugar. Cover and bring to a boil, then simmer with low to medium heat. Stir from time to time to allow fruits to cook evenly.

When the mix is soft and brown, transfer immediately the jam into glass jars and cover tight. Allow to cool, then place in a cool place or refrigerator, since the jam is poor in sugar. Use within 1 to 3 months.
NOTE: To cut on preperation time and have a creamy texture, you can cook the quartered fruits then mix with the stainless steel hand blender, prior to transfering into the glass jars.
