What is "Zaatar"?
"Zaatar" means thyme in Arabic, and refers to a Lebanese herb and spice mix also found in Jordan, and to which olive oil is added to make some kind of a sauce or seasoning that is much popular at breakfast or brunch time in Lebanon. It is used as:
- a seasoning on the "Manakish" dough, the Lebanese thyme pizza
- a condiment to be added to "Labneh", the Lebanese white spread cheese
- a delicious condiment to be spread as is on a Lebanese bread and enjoyed with or without tomatoes, cucumber or mint leaves
- a croissant stuffing that adds unique flavor and aroma to the French classic...and served at all Lebanese bakeries, even the McCafé in Lebanon!

Zaatar mix recipe
Put the Zaatar (thyme), sesame, sumac (sumach, sumak, soumak, sumaq) and salt in a bowl an mix well until obtaining a uniform mix of an olive green color as shown. That's it for now, keep your Zaatar in a tight glass jar and store it for later use.
Upon remembering the irresistible taste of the Lebanese Zaatar and willing to have some, put a small quantity of your Zaatar mix in a small bowl and add olive oil little by little until obtaining a thick liquid paste.
Spread it on top of your Labneh or favorite bread unless you'd like to bake a mankoushe (mankousheh)...
