Put the Zaatar (thyme), sesame, sumac (sumach, sumak, soumak, sumaq) and salt in a bowl an mix well until obtaining a uniform mix of an olive green color as shown. That's it for now, keep your Zaatar in a tight glass jar and store it for later use.
