Wash well the green beans and take out the main green bean end (not the sharp one) with a knife then continue pulling out the thick "hair" that separates the two parts of the beans pods.
Peel and cut the potatoes and onions in slices and cook everything as shown with just little water while adding a bit of ground black pepper.
Cook at low heat for some 30 minutes until green beans pods and potatoes are soft, then use a hand blender (immersion blender) to reduce the green beans pods into a paste.
Use a strainer to filter out again whatever hair coming out of the beans pods.

Add the potatoes, onion, milk, ginger, salt and more pepper and mix again until no onion or potato is left.
You may skip the milk if you'd like to obtain a vegan green bean pods soup.

Put on low heat and continue cooking for 15 minutes.
Add the olive oil and stir well before serving.
