Peel and cut the eggplant as shown.
Combine eggplants and tomato in a cast iron cooking pot with 1 inch of water, add salt and start cooking covered at medium heat.
Add the garlic, mint and ground pepper after a couple of minutes, mix gently and continue cooking covered at low heat for another 15 minutes or until the eggplant softens completely.
Note in the picture to the right how generous is the dried mint leaves quantity. It is not a matter of spreading mint on top, since mint leaves are an essential ingredient in this recipe.
