Different ways of preparing the potatoes and coriander
A few variants of the Lebanese "batata bkezbara" exist, but all lead to the same delicious potato side dish or starter, part of the famous Lebanese Meze, and much more tasty and less calorific than French fries.
It's the fries of the connoisseurs, although potatoes here are baked not fried!.
This recipe uses fresh green coriander, unlike the ones that rely on dried and ground coriander.
It works with any type of potato.

INGREDIENTS OF THE LEBANESE POTATOES WITH CORIANDER
- 6 or 7 medium potatoes
- 6 or 7 garlic cloves
- 1 lemon
- A few fresh coriander sprigs
- Sea salt
- 4 tablespoon of corn oil
- 1 tablespoon of olive oil
- Ground black pepper

Preparing the potatoes for the "Batata Bkezbara" Lebanese dish
Wash and peel the potatoes and cut them in medium dices.
Soak the potatoes for half an hour in water and sea salt. You can keep them for longer time in water if you're busy doing something else.

Preparing a Lebanese lemon and garlic baking sauce
Peel the garlic cloves, put them in a deep jar and add the juice of one lemon, the olive oil and sea salt, then blend them all with a immersion blender until obtaining a thick and smooth paste.

Baking the potatoes for the "Batata Bkezbara"
Remove the potatoes from water and put them in an oven baking dish.
Add the corn oil, the ground pepper and put them in the oven at bottom high heat until the potatoes start to turn soft.
Add the lemon-garlic sauce and change the oven heat to top and continue baking for a few minutes until the potatoes start to turn gold brown.

Wash well the fresh coriander and chop by hand to a coarse cut.
Remove the baking tray from the oven and add the chopped coriander.
