Recipe of the "Mousse des trois légumes"
Wash the Jerusalem artichoke, the eggplant, the zucchinis and peel them (except the zucchinis) and cut them into medium chunks.
Put all the vegetables in your cooking pot, cover to 3/4 with water and cook them until the Jerusalem artichoke is soft.
Test it with a fork which should go into the vegetable chunks smoothly.
Remove the juice and set aside for now, you could either need a bit of it later or use it as a base of a good vegetables soup.

Add the olive oil, salt, pepper and cumin and blend all with the immersion blender until obtaining a thick mousse.
You may also include other spices like ground ginger, white pepper, ground chillies, etc. according to taste.
If it's too thick, add little juice and mix again.
Serve hot or warm.
